Section 2. A person appointed as a school food service director or a person otherwise responsible for menu planning shall obtain the credentials required by KRS 158.852(2) from the School Nutrition Association (SNA), which was formerly the American School Food Service Association.

Kentucky Administrative Regulations 702 6:045. Personnel school nutrition employee qualifications

Section 2. (1) Prior to initial employment in a school kitchen, an employee shall:

  • (a) Complete the beginning school nutrition personnel training course prescribed by the Kentucky Board of Education; and

  • (b) Be issued a Kentucky school nutrition employee certificate by the chief state school officer, based upon evidence submitted to the Kentucky Department of Education, Division of Nutrition and Health Services, from a certified instructor that all training requirements have been fulfilled.

(2) The prescribed training course for certification of beginning school nutrition personnel shall consist of the following instructional units and minimum instructional clock hours:

  • (a) School food service rules and administrative regulations - one (1) hour;

  • (b) Sanitation - one (1) hour;

  • (c) Safety and first aid - one (1) hour;

  • (d) Food preparation and merchandising - one (1) hour;

  • (e) Equipment use and care - one (1) hour;

  • (f) Efficient use of resources - one (1) hour; and

  • (g) Nutrition education - one (1) hour.

his program requires that all new child nutrition employees complete a seven hour training course upon initial hire or within 40 days of hire. The intent of the program is to ensure that all food service staff members have adequate training.

(2)

  • (a) Any person serving as a school food service director or person otherwise responsible for menu planning in each school district on June 20, 2005, shall be credentialed as a “school food service and nutrition specialist” or certified by a Level 2 certificate issued by the American School Food Service Association within three (3) years after June 20, 2005. No school district shall be required to have more than one (1) person with a credential or certificate under this section.

  • (b) After June 20, 2005, a person appointed to serve as school food service director or the person designated for menu planning who does not hold the “school food service and nutrition specialist” credential or the Level 2 certificate issued by the American School Food Service Association shall obtain the appropriate credential within three (3) years of his or her appointment or designation. No school district shall be required to have more than one (1) person with a credential or certificate under this section.
